The true tarragon, which does not propagate by seeds.
Dark green, shiny leaves posses distinctive flavor.
Grows to 36". Requires light, well-drained soil in a
sunny location. The piece de resistance of all culinary
herbs. None has a more enticing and distinctive flavor;
suggestive of anise or licorice, it is deeply satisfying to
the palate. Essential in famous sauces such as bearnaise,
hollandaise and mousseline, and adds a beguiling touch
to omelets, marinated meats and poultry stuffing. Try
tarragon vinegar as a basis for salad dressings, or
tarragon butter drenched over steamed vegetables.

A beautiful aromatic scent and one of the most useful culinary seasonings. It is one of the main ingredients
of bouquet garni combined with bay leaf and parsley. It stimulates the appetite and aids digestion of fatty
food. Suits food cooked slowly in wine, particularly meat, shellfish, poultry and game. It imparts a pungent
flavor to soups, stews and stuffings. Use cautiously when picked fresh, as it is extra pungent.
Thyme has strong antiseptic properties. The tea makes an excellent gargle or mouthwash, and is an
excellent remedy for sore throats and infected gums. The essential oil is anti-bacterial and anti-fungal and
used in the manufacture of toothpaste, mouthwash and gargles. A few drops of the oil added to the bath
water helps ease rheumatic pain, and it is often used in liniments and massage oils.

Valerian roots have excellent sedative action that is non-addictive.
Widely used to allay pain, nervous unrest, migraine, and insomnia.
For insomnia valerian doesn't "knock you out" but it works more
subtletly by settling the nerves and relaxing the body so that sleep
comes more easily. Valerian roots harvested in the second or third
year can be made into tinctures, teas, or extracts.
WASABI

Pungent green horseradish-like condiment from Japan, a must for sushi and sashimi. Myths that wasabi would
not
grow outside of Japan have been firmly rebuked in recent years by American growers who are not only
growing it
successfully, they are growing better wasabi than the often adulterated product sold in the stores.
Traditionally
grown in beds of sand or gravel near cool mountain streams, we now know that wasabi will grow
quite happily in
any moist, organic-rich soil where there is shade and protection from the summer heat
-running water is not
required. After 18-24 months the rhizomes are harvested, washed, peeled and grated for
fresh use. In zones colder
than zone 8, it is possible to overwinter plants by heavy mulching or by moving
them indoors over winter.
